How a commercial coffee roaster works, stage by stage: preheat and charge, drying, first crack, drop and cooling, chaff and smoke — and what each stage means when you compare drum roasters.
What café buyers actually ask a wholesale roaster for, how a wholesale programme is structured — tiers, minimums, agreements, delivery days — and how many accounts a 6, 12 or 30 kg roaster can serve before the machine becomes the limit.
Wherever a roastery opens, five reviews apply in some form — zoning, air, fire, building and food. Who runs each, what they look at, the order that saves months, and which documents the roaster manufacturer can supply.
Whether a roastery needs separate espresso and filter roasts is a production decision, not just a flavour one. What actually differs in the profile, why the real split is milk vs black coffee, and what a second SKU costs in batches, resting and packaging.
Rate of rise is taught as a roasting skill. In a production roastery it is also a gauge of burner headroom, probe health and batch-to-batch drift. How to read RoR as a manager, which numbers to log, and what each control level lets you do with it.
Where a new roastery buys green coffee depends on whether it sits in a producing or a consuming country. Bag sizes, minimum orders, spot vs forward contracts, sample evaluation and a formula for how many bags to hold.
Roaster smoke is handled in four layers: make less of it, move it out of the room, remove it from the exhaust, and meet the rule that applies to you. What each layer costs, when an electrostatic filter is enough and when an afterburner is required.
A per-kilo method for pricing wholesale roasted coffee in any currency: landed green price, weight loss, labour, packaging, energy and the roaster itself — then margin, tiers and the three price points a roastery needs.
A commercial coffee roaster installation checklist organised by deadline — before the lease, before the order, before shipment, before delivery and before the first roast — with who is responsible and what document each step produces.
Twelve parts of a commercial coffee roaster in the order the beans meet them — what each one does, which line on the spec sheet it controls, and how it fails. Written for buyers and operators, not hobbyists.
