Buyers ask us about burr size, motor power and voltage. Almost nobody asks about coffee grinder retention before placing a wholesale order — and it is the single specification most likely to generate complaints from your customers three months later.
Retention is the ground coffee that stays inside the grinder instead of coming out. Static cling is what makes it stay there, and what throws grounds across the counter when it lets go. Neither figure appears on most manufacturer spec sheets, both are easy to test in twenty minutes, and both determine whether a café owner recommends your shop or asks for a refund. Retention vs Static: Two Different Problems
They get discussed together because they look the same at the counter, but they have different causes and different fixes.

That last row is the commercially important one. Static is a workflow problem your customer can solve with a spray bottle. Retention is a design problem nobody can solve once the container has landed. Test for retention at the sample stage.
What Counts as Good Retention?
Numbers vary with grind size, bean oil content and humidity, so treat these as bands rather than absolutes. All figures are for a fresh, clean grinder at espresso fineness.

Doser grinders retain the most by design, because the chamber is meant to hold grounds. That is not a defect — it is a workflow choice, and it is why cafés serving specialty coffee have largely moved to on-demand and single-dose. If your customers are traditional cafés doing volume, a doser grinder with 12 g retention is perfectly saleable. If they are specialty roasteries switching beans several times a day, it is not.
The 20-Minute Sample Test
Run this on every sample before you commit to a container. You need a scale accurate to 0.1 g, 200 g of beans and a soft brush.
- Clean and zero. Brush out the chamber and chute, then grind and discard 50 g so the machine is in normal working condition.
- Weigh in, weigh out. Weigh exactly 100.0 g of beans, grind everything, and weigh what comes out. The difference is your retention. Anything over about 3 g on an on-demand grinder deserves an explanation.
- Purge test. Grind another 100 g and weigh again. If the second figure is close to 100 g, the chamber has simply reached equilibrium — that is normal. If it is still 5 g short each time, grounds are leaving the chamber only when displaced by new coffee, which means every dose is partly yesterday’s coffee.
- Dose accuracy. Set an 18 g dose, pull ten consecutive doses and weigh each. Note the spread, not the average. A commercial on-demand grinder should stay within ±0.3 g. Above ±0.5 g your customers will complain about inconsistent shots.
- Heat and duty cycle. Grind 30 doses back to back, then touch the burr housing and re-check dose weight. Heat expands metal and shifts the burr gap; if dose weight and grind size drift noticeably after 30 doses, the grinder is not suitable for a busy bar.
- Static observation. Grind into a clear container at the finest setting and watch. Some clumping is normal. Grounds climbing the walls and jumping out of the container is not.
Record all six results per sample and keep them. When a factory changes a chute moulding between production runs — which happens — your baseline is the only evidence you have.
What Actually Causes High Retention
- Chute angle. Below roughly 45°, grounds sit rather than fall. This is the number one cause and it is invisible from outside the machine.
- Dead volume around the burr carrier. Gaps between the burr seat and the housing collect grounds that never clear.
- Plastic exit chutes. Cheap to mould, excellent at holding static charge.
- Anti-clump screens and mesh. They reduce clumping and increase retention. Ask whether they are removable.
- Poorly finished castings. Rough internal surfaces trap fines. Run a finger inside the chamber on the sample — you can feel the difference.

Static: What Your Customers Can Fix
Since static is solvable after the sale, it becomes a support and training issue rather than a sourcing one. The three fixes worth putting in the manual you supply:
- A drop of water on the beans (RDT). Stir a few drops through the dose before grinding. It eliminates most static and adds no measurable moisture to the coffee. The single most effective fix, and it costs nothing.
- Grounding. Some grinders have a floating metal chute with no path to earth. A short wire from chute to chassis solves it. Worth asking the supplier whether the chute is bonded.
- Humidity. Static problems spike in dry climates and in air-conditioned rooms. Customers in the Gulf and in high-altitude cities will report far more static than customers in Southeast Asia, on the same machine.
Also relevant: darker roasts and older beans are oilier and hold less static, while very light, very fresh coffee is the worst case. If your customer is buying from a roastery that ships two days off roast, expect static complaints regardless of the grinder.
The Commercial Case: Why This Is Worth Testing
Put a number on it for your customer. A café pulling 200 espressos a day, with a grinder that wastes 3 g per shift in purging plus a 0.4 g average dose overshoot:

Twenty-nine kilograms of roasted specialty coffee is real money — and dose overshoot, not retention, is the larger share. That is the argument that sells a better grinder to a price-sensitive café owner, and it is more persuasive than burr diameter. What to Write Into Your Purchase Agreement
If you are ordering in volume, do not rely on a verbal assurance. Four clauses we recommend to the distributors we supply:
- A retention ceiling, stated in grams, measured by the 100 g weigh-in/weigh-out method described above, at espresso fineness.
- A dose repeatability tolerance, e.g. ±0.3 g over ten consecutive 18 g doses.
- No unannounced changes to chute, chamber or burr supplier between production runs, with a retained golden sample as the reference.
- Pre-shipment sampling — pull three units per 100 and re-run the test before the container is sealed.
